Breakfast

Omelette de ForêtFeaturing BC Farm Fresh Eggs & a variety of fresh vegetables, quality meats and handcrafted cheeses sourced from farms and dairies in the Kootenay Rockies and southern British Columbia.

Eggs from free-ranging hens simply taste better – and they’re better for you, too.  We whip them up with kernels of frozen butter before sliding them in an omelet pan, creating light, fluffy camp omelets in the French tradition.  Have our chef make one to your specifications, or try one of his custom creations!

On the Side:

South of the Border for North of the Border:  Hearty New Mexico-style black bean chili – available with or without hearty chunks of BC grass-fed beef.    

Our slow-simmered black bean chili pairs perfectly with homemade cornbread, fresh guacamole, hearty pico de gallo and crunchy tortilla chips.  Try to finish your fresh fruit and veggies before tucking in to chewy cookies baked this morning by our chef!

On the Side:

  • Marble Cornbread with local butter and honey
  • Zesty Guacamole with Lime
  • Fresh Pico de Gallo & Tortilla Chips
  • Fresh Fruit and Veggie Sticks

Dinner

Northern Adventure Barbecued Hamburger Extravaganza: Hand-pressed patties of local grass fed beef (free-range organic chicken breasts or homemade black bean patties also available!) made from start to finish according to your specifications.  Grilled to perfection and served on a fresh baked bun.

One of our favorite meals!  Stuffed with bleu cheese or ground bacon, topped with grilled onions or smoked cheddar, drenched in barbecue sauce or something even hotter – the sky is the limit!  Design your ultimate hamburger fantasy or step up to the kitchen and see all the options our chef has to offer!

On the Side:

  • Roasted Root Vegetables with Garlic & Rosemary
  • Simple Green Salad with Choice of Dressings

The World According to Eggs Benedict: Explore variations on the classic: El Diablo with a fiery kick, Moroccan with the heady spices of Northern Africa, Florentine with spinach and mushrooms or enjoy the traditional!  Eggs cooked to order over crunchy English muffins and the toppings of your choice!

Poaching farm fresh eggs is a delight.  The whites firm up nicely, and the yolks are a vibrant orange.  We make our hollandaise from scratch to bring you a luxurious breakfast that compliments our beautiful setting.  Have our chef make a breakfast to your specifications, or try one of his custom creations!

Mediterranean Afternoon:  Savory Kefte – spiced meatballs grilled kebab-style – served with hummus, mixed greens, a Lebanese-style salsa and wrapped in a pita. 

Kefte are grilled meatballs rich with spices found throughout the Mediterranean and Middle East.  We add quality meats from local farms, our homemade hummus and Lebanese-style salsa to create a pita sandwich full of Mediterranean flavor.

On the Side:

  • Grilled Pita Points
  • Roasted Garlic Hummus
  • Olive Tapenade
  • Sliced Fruit and Veggie Sticks
  • Greek Salad with Tomatoes and Cucumber

Stewart & Hyder Seafood Feast:  A selection of fresh caught local seafood prepared by our chef.  Menu and preparation varies according to availability. 

Southeast Alaska is crisscrossed with rivers and fjords that cut deep into British Columbia.  These ecosystems support some of the most prolific sea life populations on the planet:  salmon, halibut, crab, shellfish and shrimp.  We’ll see what the local fishermen have brought in today and create a feast to celebrate the catch!
